BAFARO WINERY

ARCHEO PROJECT

STORY

Archaeology that becomes wine

In the heart of Calabria, an ancient land dedicated to viticulture, Acroneo was born: a wine that is the result of an experimental archaeology project. Archaeologist Francesco Gabriele Bafaro studied the winemaking techniques of ancient Enotria, faithfully reconstructing the tools, containers and methods used by the Greeks and Romans. The buried amphorae, handmade without glazes or modern materials, are the centrepiece of a process that respects tradition and restores the wine’s historical soul.

The Acroneo project is not limited to production: it is a continuous research into native Calabrian grape varieties, with the aim of recovering the varieties closest to those transplanted by the Greeks in the 8th century BC. Every stage, from fermentation to ageing, takes place in controlled environments without the use of modern chemicals. The result is an authentic, powerful and harmonious wine, capable of telling the thousand-year history of a territory through taste.

The design of the amphorae used is unique and not available on the market, as it is the result of my personal research, which combines the characteristics of amphorae from the past in order to create a shape that gives the best results during the fermentation and ageing of wine.
